Banana and oats Eggless Pancakes
I had a bunch of bananas laying around in the kitchen but was out of eggs, so i looked up some recipes online for toddler friendly breakfast recipes and adapted them to the following ;
For 6 medium pancakes All you need are
1 cup all-purpose flour
1/2 cup quick cooking oats
1/4 tsp salt
2 1/2 tsp baking powder
2 tsp white sugar
1 1/2 cups skim milk
2 small ripe bananas, mashed
In a large bowl, mix the flour, oats, salt, baking powder and sugar. Stir in milk and bananas just until moistened. Heat a lightly oiled pan over medium high heat. With a 1/4 of cup scoop the batter onto the pan.
Drizzle with maple syrup, or honey is always a favorite of my little one.
